
Rebeca Monroy Torres

Rebeca Monroy-Torres PhD is a professor and researcher at the University of Guanajuato in the Department of Medicine and Nutrition where she promotes the Laboratory Environmental Nutrition and Food Security. She is a Member of National Researcher System Level 1, CONACYT, 2020-2023. She is also the Founder and Director of the University Observatory of Food and Nutritional Security of the State of Guanajuato (OUSANEG) and the Chief and Founder of the Scientific Journal of Environmental Nutrition and Food Security (REDICINySA ).
Rebeca is also a book author, and a certified dietitian since 2008. She has a Ph.D. in Medical Sciences, and four separate Master’s degrees in (1) Clinical Research, (2) Technological Management and Innovation, (3) International Expert in Toxicology, and (4) Research and Development in Medicinal Plants. She is also a Voluntary Lobby to the Congress of the State of Guanajuato on the promotion of access to water in restaurants in Guanajuato at no cost .
Her research topic, “Environmental Nutrition and Food Security”, focuses to analyze the relationship between food security and the toxicokinetics of arsenic. Her research team is also looking at the adequacy of nutritional status to preserve or maintain immunity and decrease the toxicity of xenobiotics.
In 2022, Rebeca was awarded the PROSEDE INAI Award , with the project implemented in the Ladrilleras del Refugio. Through this, progress was made towards a government commitment and currently, it is part of the Mixed Commission, to address the problem of the Brick Kilns in the State of Guanajuato, entrusted and appointed by the Government (2022-2024).
